Made some tasty Dark syrup earlier today!
This is the instrument we use to indicate which grade of maple syrup we are making.
We fill a vial with the syrup we are filtering. The number indicates the percentage of light that is able to go through the syrup. This syrup, for instance, is allowing 31% of the light to pass through.
Golden- 100-75%
Amber- 74.9-50%
Dark- 49.9-25%
Very Dark- 24.9-0%
A common question from a lot of customers is if we cook the Dark syrup longer?
Dark syrup is the same density (sugar content) as golden. We do not cook it longer. The sap changes as the weather gets warmer. The ph level is lower, and there are more microbes present in the sap.
We take pride in keeping all our batches from each day separate. This allows every batch to have a bit of a different flavour every day. We also don't mix batches together, so we don't have an amber syrup but tasting like a dark syrup.
