This Creamy Chicken Lasagna is a quick and easy recipe perfect for any meal. The creamy spinach sauce and tender chicken make it a family favorite! ππβ¨π
Ingredients:
For the Lasagna:
9 lasagna noodles, cooked al dente π
4 cups shredded rotisserie chicken (or cooked from 2 lbs chicken breast) π
Spinach Cream Sauce:
1 Tbsp olive oil π«
1 medium onion, finely chopped π§
4 Tbsp unsalted butter π§
1/3 cup all-purpose flour πΎ
2 1/2 cups chicken broth π
1 1/2 cups half and half (or equal parts heavy cream and milk) π₯
5 oz fresh spinach, coarsely chopped πΏ
2 tsp sea salt π§
1/2 tsp black pepper πΆοΈ
3 garlic cloves, minced π§
Ricotta Cheese Sauce:
15 oz ricotta π§
1 large egg π₯
1/4 cup parsley, chopped πΏ
1/4 cup parmesan cheese, grated π§
3 cups mozzarella cheese, shredded (12 oz), divided (reserve 1 cup for topping) π§
Instructions:
Preheat Oven: Preheat oven to 375ΛF. π₯
Cook Noodles: Cook lasagna noodles in salted water until al dente, then drain and rinse with cold water to stop cooking. π
Make Spinach Cream Sauce: SautΓ© finely chopped onion in 1 Tbsp olive oil until softened. Add 4 Tbsp butter and whisk in 1/3 cup flour until golden. Gradually add 2 1/2 cups chicken broth and 1 1/2 cups half and half, whisking until smooth and thickened. Stir in minced garlic, chopped spinach, 2 tsp sea salt, and 1/2 tsp black pepper. Remove from heat. π§

Make Ricotta Cheese Sauce: In a large bowl, mix 15 oz ricotta, 1 large egg, 1/4 cup chopped parsley, 1/4 cup grated parmesan, and 2 cups shredded mozzarella. π§π₯πΏ
Assemble Lasagna: Spread a little spinach cream sauce on the bottom of a 9x13 casserole dish. Add 3 lasagna noodles, 1/2 of the ricotta mixture, 1/2 of the shredded chicken, and 1/3 of the spinach sauce. Repeat layers. Top with remaining 3 noodles, spinach sauce, and reserved 1 cup shredded mozzarella. πππ§
Bake: Cover with foil (use toothpicks to prevent foil from touching cheese) and bake at 375ΛF for 45 minutes. Uncover and broil for 2-3 minutes until cheese is golden brown. Let rest for 10 minutes before slicing. π₯π
