Asian Style Coleslaw with Red Cabbage and Cilantro Microgreens

(Serves 4)

Salad

6 cups Finley chopped cabbage
2-3 Carrots Grated
1/2 cup Cilantro Microgreens
1/2 cup Red Cabbage Microgreens
1/4 cup Sunflower Seeds, Peanuts or Cashews

Dressing

3 tbsp neutral oil like avocado, grape seed.
2 tsp sesame oil
3 tbsp rice vinegar
1 lime juiced
1 tsp narural peanut butter
2 tbsp honey or sugar.
1tsp garlic
1 tsp grated ginger
1 tsp soy sauce

In a large bowl, layer the Cabbage first, then grate the carrot. Add the delicate microgreens on top, do not mix.
Add the dressing when you are ready to serve, this way you can make the salad a day ahead.

Add all the dressing ingredients into a mason jar with a lid and give a good shake until all ingredients are incorporated. Or whisk together in a bowl. Adjust to your taste.

Pour the dressing on top of the salad, mix and top with seeds or nuts. Serve along side of your favorite protein.

Enjoy a delicious fresh Mango Salad, prepared with a blend of Carrot, Red Cabbage, Radish, Broccoli, and Cilantro Microgreens.

Salad

1/2 cup thinly sliced cucumber
1/2 cup diced red bell pepper
1/3 cup thinly sliced red onion
1/2 cup grated carrot
1 under ripened Mango thinly sliced into matchsticks
1/4 cup chopped cilantro
2 cups mixed microgreens
Top with Cashews, Peanuts or Sunflower seeds for a crunch.

Dressing

2 tbsp neutral oil
2 limes juiced
1 1/2 tbsp honey
Salt and pepper to taste

Our Radishes and Broccoli mix are ready! The Sunflowers sold out quickly. Due to the extreme heat, our Microgreens will only be outside before noon and after 6pm. Like us, they don't like the heat. 🥵
