Seitan Lovers Vegan Snack Pack this weekend at Suzy Spoon’s in Marrickville.

Sweet potato & tahini brownies
6 soaked dates, 1+ 1/2 cups of cooked sweet potato, 2 teaspoons of vanilla extract, 1 cup of diced chocolate, 3 tablespoons of tahini, 4 tablespoons of good quality cocoa powder, pinch of salt, 1+ 1/3 cups of oat flour, 1 tablespoon of baking soda, cook on 180c for 25 minutes. Dress with grated chocolate while hot.

Seitan with chili sesame noodles
Serves 4-

400g of Suzy Spoon’s Vegetarian Butcher brand Shredded Seitan, 6 cloves of garlic, 2 Tablespoons of tahini, 1 Tablespoon of peanut butter, 4 Tablespoons of sesame seeds, 1 cup of spring onions, 2 Tablespoons of crispy chili oil crispy bits, 4 Tablespoons of soy sauce, 2 Tablespoons of rice vinegar, 1/3 of a cup of olive oil, 200g of noodles cooked using directions on their pack. Spring onion and extra crispy chili bits to serve.

Vegan paratha x 4, 400g pack of Suzy Spoon’s Vegetarian Butcher brand of Vegan Butter Chicken, basmati rice and coriander to serve.

Suzy Spoon’s version of a Thai style vegan Seitan salad.

2 teaspoons of rice flour, 2 tablespoons of water, 2 teaspoons of brown sugar, 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 1 tablespoon of grated ginger, 1 tablespoon of grated lemongrass, 1 tablespoon of grated garlic, oil, chili, 400g of Suzy Spoon’s Vegetarian Butcher brand Shredded Vegan Chicken, 1/2 red onion, 1/2 cup mint, 1/2 cup of coriander, 1/2 cup of capsicum, 1/2 cup of spring onion, 1/3 cup of radish, extra squeeze of lime juice to serve.
