PODCAST Update: New Unsupermarket episode released

Each fortnight dynamic duo, Jayne and Leigh, delve into food topics buzzing around that affect your wallet, your health and your planet.

On this weeks episode, we chat with Hon Dr Andrew Leigh MP, Assistant Minister for Competition, about supermarket power and why reform starts with transparency. We unpack how supermarket giants continue to dominate—through shrinkflation, rejected produce, fear of retaliation stopping suppliers from speaking up, and zoning laws that limit competition.

Dr Leigh shares insights on the supermarket duopoly and why community-driven models like Box Divvy are part of the solution. It’s an eye-opening look at what’s holding the system back—and where change can start.

Scrambled tofu 'eggs'

As an alternative to eggs, did you know you can make a decent scrambled non-egg dish by using Tofu instead of eggs. Here is the recipe and video:

Scrambled tofu
Ingredients:
1 x 400gm block of silken tofu or firm tofu
1-2 tbs olive oil or vegan butter
1/4 tsp turmeric (for colour)
1/4 tsp black salt (kala namak rock salt if you’ve some for an eggy flavour) - optional
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbs nutritional yeast (for a cheesy flavour)
Salt and pepper to taste
Fresh herbs like parsley or chives or spring onions
1/4 cup diced vegetables - spinach, bell peppers, onions, mushrooms

What to Do
Drain the silken tofu or firm tofu, and then gently press out any excess moisture. Unlike firm tofu, silken tofu doesn’t need to be pressed for long, but removing excess water helps prevent too much liquid in your scramble. Then, crumble the tofu with your hands or a fork.
In a frypan, heat oil on medium heat. And pan fry vegetables.
Add the crumbled tofu to the frypan and stir to combine. Cook for 3-5 minutes, stirring occasionally, until it warms through and begins to take on a scrambled egg-like texture.
Season with turmeric, black salt if using, garlic powder, onion powder, nutritional yeast (if using), salt, and pepper. Stir well to ensure the tofu is evenly seasoned and turns a yellowish colour from the turmeric.
Continue cooking for another 2-3 minutes, adjusting seasoning if needed. You can also add fresh herbs at this point for extra flavour.

Serve
Serve your tofu scramble with toast, avocado, or as part of a larger breakfast or brunch spread.

Carrots

Seen any bunnies around lately? And we’re not talking NRL here (although the bunnies are doing well).

Chocolate could be a problem though, with prices sky-high – thanks to record cocoa prices.

Perhaps the Easter Bunny should be delivering carrots instead: at $1.30 a kilo, they’re better for your teeth, your eyes and your wallet!

Pineapple

Is this a sign that Queensland is turning a corner, after the recent floods?

It’s too soon to tell, but what we can say is that pineapples are flooding the market (pardon the pun): small fruit, tops on, super sweet – and just $2 each.

Get yourself a couple of pines whilst supply is up: we just don’t know how long this will last.

New at Box Divvy: Sandhurst pickled vegetables and sauerkraut

Sandhurst Fine Foods is an Australian-Italian family-owned and run business, established in 1988. “Behind every good product is a good family”, they like to say. All pickled vegetables are made from scratch.

In addition to the pickled capsicum, Jalapeno, artichoke hearts, baby capers and sun-dried tomatoes, we are selling their Sauerkraut (made the traditional way without any vinegar), Arborio rice and Lasagna sheets.

Over the coming weeks, the range will expand to include dill cucumbers and other pickled vegetables.

You can find them under Pantry ➡️ Meal Preparation ➡️ Pickled Vegetables and Condiments
