The wait is almost over! This Sunday, March 16th, the Hastings River Oyster & Prawn Festival is taking over Westport Park, Port Macquarie from 10 AM – 5 PM with a day packed full of delicious seafood, live entertainment, and festival fun! 🌊✨

Over the next week, we’ll be highlighting our oyster and prawn men, giving you a glimpse into their lives and craft.

MEET ELI WILSON: A THIRD-GENERATION OYSTERMAN 🦪 Port Oyster Company

Growing up on the oyster farm with his dad, Eli didn’t think much of the long days and hard work. After years working in different industries—from bartending to construction to life as a deckhand overseas—he returned home to the Hastings River and saw the farm in a whole new light.

"Compared to all the jobs I’d done, this life keeps me fit, healthy and connected to the ocean. Oyster farming is no easy ride—it’s like gambling with Mother Nature" Eli says.

Success depends on years of local knowledge and Eli is learning the ropes from his father, Paul Wilson, who’s been farming oysters for nearly 50 years.

"Every decision is a calculated risk and success depends on years of local knowledge as each estuary is different, with its own unique challenges and you can't truly understand the river without time and experience."

“What I love most about this life is the freedom—running your own race, working with the tides, reading the weather and staying in sync with the environment. For someone who’s always loved the ocean, that’s pretty hard to beat.”
