It’s that time of year again where we take to the streets and spread Christmas Horsey Cheer through the streets of Greenvale. We take you on horse back to one of the most famous and special streets of Greenvale to see some spectacular Christmas lights. We will be doing this amazing ride Thursdays, Fridays and Saturdays through the month of Dec starting Thursday the 4th of December the price starts at $150 per person. We start at 8pm and finish around 10.30pm. This is an experience like no other!! So send us a message and get on board and let’s all spread some Christmas Horsey Cheer

Highfield Miss Dayotna for sale.
Misdy is just an amazing 8 year old mare who raced for us and was just a darling of the track. Always giving her utmost in every race. She retired 2 years ago, super fit and healthy. Since then we have retained her to join our team of performance horses.
She has done some eventing with a super attitude and has taken the OTT Showjumping circuit by storm. If she is not winning the classes and rugs (has won 3 OTT SJ Classes at 90 to 1.05) comes home with a ribbon. She is just one of those mares that just tries so hard for you. She is just beautiful on the flat and has a gallop to die for, so balanced and powerful, this girl really has the ability to be that 5* TB Eventer.
At 16hh Misdy is fit, sound and happy, however windsucks on a low to mild basis. We have her out on pasture with constant hay rolls etc so we find she doesn't do it much at all. (I have two serious windsuckers and she is certainly a very low level one).
She is now ready to find her future long term partner that will develop her amazing skills further.
This girl is priced to sell and to ONLY the most suitable home. Partnership to us is the most important. 13,000

Just been visiting the incredibly flourishing vegetable and herb garden at Highfield Equestrian Centre. WOW.
This place is more than a fabulous equestrian centre ,it’s a hidden gem , where you can be notified of what’s available to be picked , on request.or simply ask when next you visit this intriguing location, with your horse, or not ,if you just would like some home grown fresh produce 🥬🌶️🥔🥦🥚
The free roaming chickens were most well behaved and I purchased a few dozen of their fabulous fresh eggs.🥚perfection 🙏these are usually available on most days. Preorders are advised as they sell out very quickly.
Zucchini is really in season and the much prized zucchini flowers are ready to be picked , stuffed with your own delicious ingredients, these are a a must for your next antipasto platter.
I purchased both flowers and a stunning medley of fresh zucchini to make a delightful zucchini, basil and Parmesan soup.
It’s perfectly light and tastes of summer with its simple seasonal ingredientsfresh and fabulous broad leaf Italian rocket was a gobsmacking surprise. Loaded with that peppery , bitter rocket flavour. Drizzled with your favourite olive oil and a shaving of freshly grated parmagiano 🧀

Zucchini Basil and Parmesan soup.

60ml olive oil
Tablespoon of chopped garlic
Good handful fresh basil. I use lots.
A kilo of freshly picked zucchini
750ml chicken stock
60 ml poring cream
Chopped flat leaf parsley
Lashings of freshly grated Parmesan
Salt flakes and cracked black,pepper
I also enjoy a fresh grating of nutmeg to finish.

Sauté the garlic, basil and zucchini until lightly browned and soft., add salt
Pour in stock and pepper, Cook until all ingredients are amalgamated and tender. About 8/10 minutes.
Remove from heat, blend until smooth
Add cream, parsley and Parmesan and reheat
Serve with nutmeg and more Parmesan if desired., with crusty bread .
A stuffed zucchini flower alongside is a most delicious accompaniment.

Fun times for the horses at Highfield!! Not!
Thanks to all those involved in helping to move and house our horses so they can be safe over NYE 🥰🥰🥰 we are always so grateful 🙏🏻

Some of our incredible young riders out at the Melbourne Show Jumping Clubs pop up competition this weekend.

Young Liv on her bay OTT Stella, coming away with 1st and 2nd in her two classes. Stella was trained at Highfield before being purchased by Liv and her mother. Stella remains agisted at Highfield continuing to receive training from our wonderful couches.

All riders had a fantastic day and used skills taught to them in their lessons at Highfield each week.
