Did you spy them?

Pancakes on the menu - 4 weeks only

“Jimmini pancakes!” We missed International pancake day on Tuesday 4th - or did we?

Our wonderful Lebanese baker, Bankstown Bakery, is making pancakes! "Atayef" pancakes are traditionally stuffed with a ricotta cream, sprinkled with crushed pistachios and served with a rose-water. But you can simply drizzle them with maple syrup or honey. It’s a traditional dessert widely enjoyed throughout the Middle East, particularly during Ramadan which is now.

Ingredients: flour, sugar, yeast, water and orange blossom water.

For the next 4 weeks, Bankstown Bakery will supply trays with 16 pancakes for $6.50, that’s 40c a pancake! You can freeze them and best with baking paper between them in a sealed container.

Top with 2 pops and Snives honey, maple syrup, or some Berenberg jam. Added to this here are two other pancake topping ideas:
1. Peanut butter (eg. Mayvers or Ridiculously Delicious in Box Divvy Pantry), sliced banana and chia seeds
2. Ricotta (eg. La Vera Fresh Ricotta in Chilled), mixed berries and a sprinkle of Belicious ground cinnamon
Yum.

This makes me appreciate where my food comes from as it’s so easy to be disconnected.

This makes me appreciate where my food comes from as it’s so easy to be disconnected.

Something to think about.

Whilst the clean-up in North Queensland is gathering pace, a week after more than 2000mm of rain was dumped between Townsville and Cairns, supplies of bananas and other produce is slowly improving. The Bruce Hwy has been re-opened and trucks have been able to transport produce to eastern seaboard markets.

Getting our banana orders filled is still a daily struggle, and growers say that banana prices will remain elevated for a while as around one in four banana trees have suffered damage from inundation. However, on the upside: papaya and passionfruit are back on Marketplace, whilst limes have eased in price.

Speaking of daily struggles: free-range egg supply is still extremely tight – even between Hunter Valley, Ash & Sons and Moonbi. To make matters worse, demand for eggs is up – in part driven by Australians’ obsession with protein. According to the SMH, average consumption per person has reached 266 per annum – or more than 5 eggs per week. We have our fingers crossed that Avian Influenza – or Bird Flu – remains contained and won’t create the same havoc as in 2024. However, in the US there are growing signs that the H5N1 strain – which has not yet been detected in Australia – is spreading among dairy cows, cats and humans. Hope for the best, plan for the worst…

Little bursts of flavour bombs!

Since I joined Box Divvy, I have tried many foods I had never experienced before (and we're a foodie family!!!).

I remember when then Kiwi Berries first came out, I thought:

"Well I love Kiwi Fruit. So these must be similar."

KIND OF, Yes, but no....there is a delicate burst but somehow they're like "same-same but different".

And we loved them.

The kids took a whole punnet to school EACH and shared with their friends and they became known as "HEALTHY LOLLIES".

So happy to see them back!

Did you know that you can make delicious fresh mayonnaise at home in seconds, in a NutriBullet blender?

No preservatives, no nasties, and lasts for a week in the fridge. This is a great option for anyone avoiding seed oils.

You’ll need:
250ml (1 cup) oil. I like to use extra virgin olive oil, but you can use a more neutral tasting oil, like avocado oil, if you prefer.
63ml (1/4 cup) cold water. This is super important to help the mayonnaise set.
2 large egg yolks
2 tablespoons Dijon mustard
Juice of a lemon
1/2 teaspoon of Celtic sea salt

Place all ingredients in your blender and blend for 45 seconds, or until emulsified.

Yum :)
