3 DAY ORDER CYCLE –FOR Thursday pick up

Before 9pm Saturday as a courtesy for your Hubster if you do not wish an order login, go to MY ORDERS, dropdown Suspend Deliveries and tick the date not wanting an order. If you do fortnightly then this is the place to go to organise your orders. Saturday 10.30pm – Orders are created. You get an email. Note Star Products at the top of the list in SPLITS tab. These are recommendations by your Hubster. The green dollar sign products are good value. Start your order in Marketplace then go to your SPLITS tab. This is explained in your Welcome email. Tuesday 9pm - ORDERS CUTOFF
Orders closed. Cards charged. There are 2 automatic processing’s, if those both decline - a $5 recharge fee is applied as it pays for someone to manually reprocess. You must pay BEFORE pick-up. Thursday - PICK UP. You must pick up day of delivery at the pick-up time or arrange with Hubster. PAYMENTS
You must pay for your order once committed to an order cycle. It's OPT OUT. So if you don't want an order, you’ll need to suspend before orders are created. Once in an Order Cycle we cannot withdraw an order. It is your responsibility to suspend the correct weeks. If your payment declines twice there is a $5 recharge fee applied to the third attempt. From Field to Fork: Raymond’s Globe Artichokes in Season
Spring is in full swing at Castlereagh and Freemans Reach and Raymond Camilleri has been busy in the fields harvesting beautiful globe artichokes.

The tender, green globes are a true seasonal delight, and nothing beats picking them fresh from your own acreage or, in Raymond’s case, from his mum’s farm at Freemans Reach. With their nutty, slightly sweet flavour, these artichokes are perfect for a variety of dishes, from simple steamed preparations to more elaborate sautés and salads.

Preparing globe artichokes is easier than many think.

Start by trimming the tough outer leaves and snipping the sharp tips. Cut off the top third and trim the stem, then rub the cut surfaces with lemon to prevent browning. From here, you can steam or boil them until tender usually 25–40 minutes depending on size. Serve with melted butter, aioli, or a drizzle of olive oil and a sprinkle of sea salt. For a richer dish, hearts can be sautéed or roasted with garlic and herbs, adding a delicious centre piece to any meal straight from Raymond’s fields.

Artichips - For kids to make. Serves 2:

2 Artichoke
butter flavoured cooking spray, 3 seconds
1 tsp BBQ seasoning

Rinse Artichoke under cold water and trim stem to 5cm long. Snip/Trim each leaf with kitchen shears or scissors. Set Artichokes aside.

Careful when using hot water! In a large glass microwavable container microwave 3 cups of water until boiling (about 5 minutes). Place the Artichokes in the dish of hot water with the stem sitting flat in the water. Cover the Artichokes with an inverted Pyrex microwavable bowl. Microwave Artichokes on high for 15 minutes. Artichokes are done when you can easily pierce through the stem with a fork.

Remove the Artichokes from dish and cool until you can handle. Separate leaves from the choke and place loose Artichoke leaves in a food storage bag. (Save the Artichoke Hearts for another healthy dish).

Spray butter or garlic flavoured cooking spray on Artichoke leaves and sprinkle with your favourite BBQ seasoning. Close bag and shake until leaves are coated. Store in the refrigerator and serve warm or cold with your favourite dip.

Fever Tree Mixers

We’re already getting hot and sweaty about this one: Fever Tree mixers are back for more action! After previously selling out in less than a week, we’re not taking any risk and bought 20 pallets worth. So what have we got?
You already know the Raspberry and the popular Elderberry mixers, sold by the 8-pack for $5 each. That’s less than half price.
Then there’s the Light Tonic water, which comes in 200ml bottles, sold as a 4-pack for $3. That’s a massive 67% off.
And here are some new ones: these 500ml Margarita Mixers and Martini Mixers are selling for as much as $24 a bottle. Crazy right? And you still have to add the alcohol. Although, actually you don’t: they taste good on their own, with some sparkling mineral water. Anyway, don’t pay $24: they’re just $3 a bottle. That’s a crazy 80% off, with a Best Before Date of 31 December. I just don’t think they’re going to last that long…
Actually, we think we have enough stock for the next 2-3 weeks – so Friday Hubs have nothing to worry about.

Regular tomatoes have been cheap for a while, but truss tomatoes haven’t – until now: several growing regions have started picking, and prices are easing to $3.75 a kilo. Or if you buy by the 5kg tray, we can go as low as $3.30 a kilo. That’s the lowest price so far this year.

We’re in the in-between-seasons period, when apples and pears are starting to become scarce (and pricey), but typical summer fruit – stone fruit, mangoes – is still not abundant. Luckily, berries are carrying us over this gap – especially blueberries - but the jumbo punnets of strawberries are finished 😱. Strawberry supply is in a state of flux right now: most Queensland fruit has finished up, some supply is coming out of West Australia (but the quality is hit and miss, and we’re a little suss about the long transport lines) – and Victoria is only a week or 2 away from starting its season. There are a lot of strawberry farms on Melbourne’s outskirts – around Monbulk, in the Yarra Valley, the Dandenong ranges and around Bacchus Marsh.

Meanwhile, Kensington Pride mangoes are holding their price – but R2E2s are getting cheaper. They’re on Marketplace now for $35 a tray – which works out to around $2 a mango. There was a time when R2's were not the best-eating mango around, but they have made big strides in flavour. And unlike KPs, they are not stringy.

Rockmelons and honeydew melons are good value, but don’t get us started on seedless watermelons: they are now approaching $3 a kilo, and this won’t improve for at least a few weeks.

Vegetables

Most vegetables are excellent value again this week – with the notable exceptions of corn and beans. This time of year, both come from the same farm in Lockyer Valley, and over the past 2 weeks they’ve had machinery breaking down. So hopefully things will improve once they’ve repaired them.

All brassicas – from broccoli to cabbages and kale – are still cheap; avocadoes are tightening up a little, but still way cheaper than the $2 you’d pay in the supermarkets. Sugarsnap is out but snowpeas are good. All root vegetables are in good supply, with more beetroot coming from Pellicone Farms in Virginia, SA. Cucumbers are cheap, especially baby Q’s at $1.79 a serve (around 200g).

Tomatoes remain good value, especially truss tomatoes and Roma. Pumpkins and zucchini are in good supply, but summer squash is taking a break.

Spuds remain pricey for another few weeks until SA gets going.

Raymond Camilleri is picking green Globe Artichokes in Freemans Reach this week: they’re under $2 each, but you’ll see them in the shops typically for $3-4. Recipes and how-to following below.

Hunter Valley Eggs price down

Free-range egg supply continues to improve, and prices are easing – so Hunter Valley has reduced their wholesale price by 50c a carton. Which we duly pass on to our members. A dozen free range eggs from the farm with one of the lowest stocking densities in the industry – 950 hens per HA – will now cost you $7.87 per carton. There’s only one caveat: we don’t know if this is the new normal, or just temporary – but bank it all the same.

Domestic beef prices rise as Australia’s exports double

Australia’s exports of beef (and lamb) are rising rapidly. As a result, supply to the domestic (Australian) market is tightening up – and Handler is reporting some hefty price rises for beef and lamb cuts.

Just as well we managed to get some good deals from another supplier (Meat Online in Granville)

Scotch fillet: a 2kg cube roll for under $40/kg

Slice you own steaks, oven-roast or barbecue this premium fillet. It’s the ribeye minus the bone.
At around 2kg each, this Scotch is quite manageable and should get you around 8-10 steaks (depending on thickness).

Pork Fillet for under $20 a kilo

Pork Fillet or Tenderloin Special: 400-500g fillet for $8.96 (under $20/kg) – perfect for stir-fry, pan-fry, oven or barbecue. That’s 33% off last week’s price, thanks to oversupply in the market.
