Knotalotta Acres Started in 2013 with the goal of producing our own food. We proudly raise rabbits, chickens, ducks, geese, turkeys, and bees, as well as garden.

We technically began our journey in 2010 with the hopes of having a successful garden. We harvested everything from corn to beans and herbs to lettuce. It was decent, but we both learned a lot from that first garden. In 2011 we had a little more luck with our produce and we added a flock of chickens. We built a chicken tractor and they spent much of their time grazing in the yard. However we had b

igger plans for them. In 2012 we moved the garden to a larger part of the yard, and let the chickens have that space to roam. We also added some guinea hens and ducks to our flock, which we later decided wasn't such a good idea and traded them for some bantams. In 2012, we harvested 400+ pounds of produce. Yet again we had bigger plans for the following year...

This year we have added meat birds (cornish X rocks), and are adding Black Australorps, Auraucanas, and White Orpingtons. We are trying to produce our own meat chickens for a whole year. On top of adding meat chickens, we also added some Flemish Giants, Anne and Henry, who produced a litter of 7 on 1/23/13. We are hoping to crossbreed with either Californians or New Zealands for a smaller meat rabbit. Our other goal for 2013 is to produce 800+ pounds of produce. So join us on our journey of trials and tribulations. We hope to inspire everyone in our approach to a more simple, self sufficient life. We'll be doing everything from butchering our first rabbits and meat birds, canning and food preservation, producing heirloom fruits and vegetables, cooking with our produce and home grown meat, and everything in between.

The garden looks like an Amazon jungle right now!! There are plants I can barely get to, trellised beans that I have to duck under, and pathways that are non existent. But this is my favorite time of gardening season!! It's getting cooler and new crops will be ready soon...butternut squash, sweet dumpling squash, all of the pumpkins, kale, chard, and more beets. Best of all, most of these don't need processing. The squash and pumpkins will go into cool storage to be enjoyed all winter 🤗
Side note....why do volunteer plants do better than those that I "try" to care for? I have a mess of volunteer tomatoes that look a million times better than the ones I started from seed 😐

Choose a vase and stuff it with your choice of flowers. There are sunflowers, Zinnias, a few dahlias, cosmos, sweet alyssum, and calendula. Please only take what you can fit in the vase you choose.

I made a whole new batch of fall scented candles that will make their debut the first weekend of September 🍁🎃

Tallow balms are also on sale!

I have made a few jars of unscented.
Also please note, that if they have become too thin for your liking, just pop them in the fridge until they harden up a bit.

It was cool, rainy, and gloomy here today. It felt much like a warm October day. So that called for chili for dinner!
With the freshest of fresh veggies, some venison burger, kidney beans, seasonings & spices, this chili came together in no time. I don't have a recipe, but I'll share what I normally use-

1 pound of burger...I use venison, but you can of course use beef
Chopped fresh tomatoes, jalapenos (seeds removed), bell pepper, onion, and garlic
(I do all of the veggies to whatever looks good)
1 can of kidney beans
Worcestershire Sauce
Wrights All Natural Liquid Smoke
Smoked Paprika
Liquid Aminos
Cumin
Oregano
Salt
Pepper

Again, seasonings and spices are to taste...I never measure anything 🫣

I sautee all of the veggies, except tomatoes, in avocado oil until they are partially cooked down. I then add the tomatoes, seasonings and spices. Reduce the heat to a low simmer, cover, and let cook for about 2 hours. After the 2 hours, I cook the burger and add it to the sauce, along with the beans. I let that simmer for about another hour.
We eat ours with cheese, sour cream, candied jalapenos and/or crackers. Buttered cornbread also pairs well!

And I didn't do it this time, but I will add pureed pumpkin to our chili sometimes too. It thickens it just a little and gives it a slight sweetness.

Yesterday was spent making Zucchini Pineapples 🥒🍍
Our zucchini harvest has been "Eh" this year. Squash bugs and vine borers have wiped out half of the plants. But I definitely still have more than I know what to do with. So I tried zucchini pineapples or mock pineapples. So easy to make and they taste just like pineapple chunks. These will be great in stir fries and sweet & sour chicken dishes during the winter.

Recipe: Makes about 10 pints

Pineapple Zucchini

4-5 quarts cubed or shredded zucchini

46 oz. canned unsweetened pineapple juice

1 1/2 cups bottled lemon juice

2 1/2 cups sugar

pint or quart canning jars, lids, rings

water bath canner

Prepare canning jars, fill and start heating up water bath canner.

After peeling, removing seeds, and cutting the zucchini to your desired style (shredded= crushed pineapple, diced= chunk), set it to the side and prepare the juice mixture.

In a large pot, combine pineapple juice, lemon juice, and sugar. Stir until completely mixed. Add zucchini and bring to a boil. Simmer for 20 minutes.

Fill your hot, clean canning jars with the zucchini, adding liquid to reach 1/2 inch headspace. Place and tighten lids/bands.

Can in water bath canner for 15 minutes (*reminder= start timing after adding jars and water has reached a boil) . Remove and let sit until cooled and all lids have “pinged”- can take up to 24 hours. Remove rings, label and store.

New hours for the stand.
The stand seems to only be busy on the weekends, and since we're in the thick of harvesting and preserving, I'm updating the days and times that we will be open.
Thursday - Sunday from 11-7
I will update on Thursdays with what we have available.
I will be adding fall scented candles and crafts soon.
We will still have lots of beans, cucumbers, pickles, tomatoes, and squash.
Flowers will be available to make your own bouquet.
And we will have pumpkins soon!!

Thank you for all of your patronage so far this year!! We look forward to serving you well into the holidays!!

Stand is open all week until dusk. We were closed yesterday due to the rain, so I apologize if you stopped by and we weren't open.

From now until I run out of beans, pickling cukes, cucumbers, and squash (which feels like never 🫠🥴) They are all pay what you can. I have so much more than I need, I think the animals are even getting sick of them 🤣

Tried something new canning today...Green Beans and Potatoes.
I was getting a little bored just canning regular green beans. A customer stopped by the stand last night and got a bag of beans and mentioned that his mom cooks beans with potatoes. Well that sounds delicious and something that could be canned! So here we are! And to make them extra delicious I canned them in the turkey stock that we make from our Thanksgiving turkey every year. Brian stuffs the turkey with the most delicious aromatics and it just makes the best broth!!
Heres the recipe for the potatoes and beans: (maybe during Thanksgiving I'll share his secret ingredients for stuffing the turkey 🤫)

Ingredients

Green Beans: Cut or snapped (about 2 cups per jar)

Potatoes: Peeled and cut into small pieces (about 1 cup per jar)

Broth or Water

Optional: Salt, Onions

Instructions

Snap or cut the green beans and then rinse

Cut up the potatoes and then rinse. Soak for 20 minutes, rinse, then soak another 20 minutes to remove starch

Add 1 cup of green beans, then 1/2 cup of potatoes into each quart jar then repeat. Add additional green beans to fill the jar leaving 1-inch headspace

Fill the jar to 1-inch head space with boiling water or broth

Wipe the rims of the jars and add the canning lids

Process in pressure canner for 40 minutes for quarts

When the canning process time is complete and the canner has had time to depressurize, remove the hot jars with a jar lifter and place the canning jars of hot beans on a dish towel on the counter and do not disturb for 24 hours.

This is my first year growing Zinnias and I'm hooked! Not only are they prolific and come in so many pretty colors, but the pollinators love them. I've seen hummingbirds ditch the feeders for the flowers. And have seen so many bees and butterflies on them.
I planted these in my small raised beds by the house. Along with basil, lemongrass, rosemary, sage, and lavender. They were supposed to be my "tea" beds, but are quickly becoming my pollinator beds.
I think next year will be my flower year. I want to plant more Zinnias and Bee Balm, and experiment with other flowers that bring in the butterflies, hummingbirds, and bees. I would love our whole front yard to be a huge cottage garden...but that will take time. Until then I will enjoy my little pollinator patch from the kitchen table 🌸🦋🐝
