The garden and food forest have really started to flourish. Not a big radish or Swiss chard fan but the chickens and geese love the greens and will eat the radish if you crush it up.

This year we’ll have apples, peaches, pears, plums, blueberries, figs, grapes, green beans, peas, corn, strawberries, basil, carrots, Swiss chard, radish, turnips, garlic, potato’s, onions, cucmbers, sunflowers and I’m sure I’m forgetting a thing or two.

I still need to get my golden thornless raspberry seeds in the ground and my pumpkin patch going.

Oh it’s been a busy year but finally getting back into the swing of things.
Here are some of the babies hatched out over the last few months. Quail for a friend, some goslings, Easter/olive eggers and silkies.

The incubators (and mother duck and goose) are filled with geese eggs, duck eggs, and silkies!

Hello all! It’s that time of year to offer up an environmental friendly way to dispose of your Halloween pumpkins again.

Once the holiday season is over I offer pumpkin drop offs and you can even smash the pumpkins in the yard and the chickens will clean up the mess.

Just want a fun activity to do with the kids? Have an ex you want to imagine their face on the pumpkin as you go to town smashing it with baseball bats, golf clubs or shovels?
Some of the chickens and ducks will even eat the pumpkins out of your hand.

My 6 year old would also love showing off the birds and giving a little farm tour, there may even be some baby chicks to pet.

Once the winter/spring peas died out I went ahead and planted green beans. Here’s our first harvest!
My son helped me snap a few and we cooked them for a late night snack.
I’m excited to process the rest after work tomorrow and prepare some more baby food for when little girl is old enough.

Had a customer use my duck eggs for a deviled egg competition and they made fancy shrimp and grits deviled eggs.
If you haven’t had a duck egg before you really have to try it. The yolk is so much richer that a chickens and can really help elevate the flavor profile and give a creamier taste.

Charleston shrimp & grits deviled eggs
(A Sweet Nothin's original recipe)

Boil:
-1 handful old bay
-1/2 cup apple cider vinegar
-Water (to cover eggs)
-36 duck eggs (add after water reaches a rolling boil for 10min then boil for 12min. Immediate ice bath)

Simmer:
-2 heaping handfuls of yellow grits (till very soft)
-2 parts buttermilk, 1 part water (add to consistency)
-1 part salt, 2 parts pepper (add to taste)

Fry:
-1lb hickory smoked bacon (fry dark brown then crumble)
-1lb peeled and deveined salad shrimp (add to frying pan with crumbled bacon)
-Sweet Nothin's cajun seasoning (generous dusting across the whole pan)

Caramelize to dark caramel:
- EVOO (cover the bottom of the pan)
-1 Vidalia onion (chiffonade)
-1 green bell pepper (chiffonade)
-1 red bell pepper (chiffonade)
-1 bushel celery (chiffonade)
-7 pods garlic (chiffonade)

Mix:
-Yolks from 24 peeled and halved eggs (save the remaining 12 yolks for another dish)
-Bacon
-Shrimp
-Caramelized Trinity with the pope
-cooked grits
-12oz peper jack pimiento cheese with jalapenos
-1 cup dukes mayo
-4 heaping tbsp stone ground Dejan mustard
-4 tbsp dill pickle juice

Refrigerate till cool:
-Eggs (cup up on a cookie sheet)
-Filling (in a Ziploc bag)

Fill:
-overfill egg whites with the cold filling mixture

Plate:
-Dust filled eggs with 1 part parsley, 1 part smoked paprika, 2 parts Sweet Nothin's cajun seasoning.

The babies would not cooperate during photo time 🙃 they’re mostly black with a few brown or white spots.
I have 3 two week old Easter eggers left.
And 6 five week old Easter eggers.
All 8 of the Muscovy eggs have pipped! And will hopefully hatch over the next few days and be ready for new ponds soon.
