For over 20 years, I have maintained a small family kennel that breeds & raises English AKC Labrador Retrievers. I have spent decades learning pedigrees, going over dogs, talking, and learning from those in my breed specialty and those outside it. Puppies are raised in our home where they have plenty of exercise, socialization and love. Breeding goals have always been focused on choosing quality of stud and temperament to insure you get a sound well bred puppy that conforms to AKC standards.

Lebanon bologna is a uniquely Pennsylvania delicacy with deep roots in the heart of Pennsylvania Dutch Country, specifically Lebanon County, which is how it got its name. This tangy, smoked, and slightly sweet beef sausage traces its origins back to the late 1700s to early 1800s, when Pennsylvania German (or “Dutch”) immigrants brought with them old-world curing and fermentation techniques.

Unlike typical bologna, Lebanon bologna is made almost exclusively from beef—a choice influenced by the farming traditions of the Mennonite and Amish communities, where beef was more readily preserved for long winters. The meat is ground, heavily seasoned (often with black pepper, mustard seed, and sugar), and then cold-smoked for days, giving it that signature deep reddish color, pungent aroma, and complex tangy-sweet flavor. Some varieties are also fermented, which adds to its distinctive taste.

Seltzer’s Smokehouse Meats, established in 1902 in Palmyra, PA, is one of the most famous and long-standing producers. Lebanon bologna remains a staple in lunchboxes, deli counters, and holiday meat trays throughout the state—and for many Pennsylvanians, it's a nostalgic taste of home that you just can’t find anywhere else.

Pennsylvania Dutch chicken pot pie famously skips the crust entirely, showing up as a hearty stew of thick noodles, chicken, and potatoes. Outsiders get confused, but around here it’s normal. When in Rome you eat pasta, and when in Pennsylvania Dutch country you eat your “pot pie” like it's soup and don’t question it.
