July Updates From the Farm

I hope everyone had a fun and safe 4th of July! We snuck away for a bit — first to visit dear friends in North Carolina, then up to the lakes of Minnesota for some family time. The little break was much needed, but as always, it feels good to be back on the farm.

The animals did just fine while we were gone… and you’ll be happy to hear that Cher-roo and Priscilla have (mostly) worked out their differences. I even caught them hanging out together the other day...small farm miracles!

The garden held its own too — even though it only got 0.16 inch of rain in the 10 days we were gone. Now, it’s in full summer jungle mode. Pumpkin vines are running wild, sweet potatoes are covering every bare patch of ground, luffa is climbing anything it can grab, and tiny papaya trees are popping up everywhere (thank you, homemade compost!).

Even though we only planted one pumpkin variety, we’ve got all kinds of unexpected shapes, sizes, and colors showing up. Gotta love surprise veggie crosses. Looks like I’ll have plenty of inspiration for this year’s Perfectly Pumpkin Body Oil! 😊

In the Making Lab…

I’ve been deep into experimenting with my newest obsession — hydrosols!
If you’re not familiar, hydrosols are the gentle, aromatic waters left over after essential oil distillation. They’re milder than essential oils but still packed with the plant’s healing compounds. Think of them as aromatic waters — perfect in lotions, soaps, even drinks, or used on their own as a natural toner or refreshing mist (especially great after oil cleansing — check out my latest blog post on that here (https://www.vitalacrefarm.com/s/stories/how-to-oil-cleanse-and-why-it-works) ).
I’ve been debating getting a distiller for years… and finally pulled the trigger! Now I’m distilling every plant I can get my hands on. I’m still learning the intricacies of each hydrosol and fine-tuning a final formula, but keep an eye out for a hydrating face mist joining the Vital Acre lineup soon.

June Updates on the Farm🌿🐔🍅

Hi Friend,

Apologies… I might have skipped the May newsletter. Oops. But that’s life on the farm—May is a blur of planting, harvesting, infusing, and trying to survive tomato season. So let’s catch up, shall we?

The garden was overflowing (especially with tomatoes—oh lawd, the tomatoes), the animals were being their usual ridiculous selves, and in between it all, I’ve been busy infusing fresh oils before the herbs lose their peak potency and finalizing a few new skincare formulations I’m really excited to share with you.

Let’s start with the tomatoes. I’ve made and canned:
• 12 quarts of ketchup (hubby is a ketchup fiend)
• 12 pints of pizza sauce
• 2.5 quarts of marinara
• a few quarts for random recipes

At this point, if I never see another tomato again, I’ll be okay.

Normally here, I'd talk about the health benefits of tomatoes, but I know what you really want to hear about is the turkey-chicken drama.
So here’s the scoop (or should I say coop?):

Elvis (our turkey) “came into season” recently, and let’s just say, the chickens weren’t impressed with his advances. Realizing he needed a girlfriend of his own species ASAP, I set out to find a turkey hen. Easier said than done. The scammers on Facebook Marketplace were wild. (Yes, people really fake turkey hen listings—who knew?)

After nearly two weeks of feverish searching, I finally connected with a lovely homesteader in Live Oak, drove all the way out there, and brought home Priscilla (of course). It was love at first sight—for Elvis, at least.

Everything seemed to be going smoothly the first few days, but suddenly Priscilla set her crosshairs on Cher-roo, our poor Silkie rooster. She decided she hated him. Like, really hated him. Daily attacks, bald spots, and a bloody comb later, I learned this is common with turkey hens and roosters. Some folks say the turkey will even kill the rooster if left unchecked. So, I became a full-time poultry referee, separating them every day and supervising their limited hangouts.

However, after a few weeks of this Cher-roo got fed up and started attacking me. That was the final straw. He’s on his own now—but has figured out he can escape into the hen house where Priscilla’s turkey body can’t follow. They still squabble, but Elvis usually breaks it up (he’s a lover, not a fighter). Cher-roo is holding his own and his male pattern baldness feathers are finally growing back, bless his heart.

🥬 Irish Veggie Highlight: Cabbage – The Unsung Superfood!
Our last crop of cabbage for the season is growing strong, and we love it for so many reasons! Cabbage is loaded with vitamins C and K, supports gut health, and is a powerhouse for digestion—especially when fermented into sauerkraut.

Raw fermented sauerkraut is a game-changer for your microbiome, full of natural probiotics to keep your gut happy, your skin clear and your immune system strong. Plus, it’s super easy to make!

🥄 Simple Sauerkraut Recipe

Ingredients:

1 medium head of cabbage (or more if you like)
pure sea salt
clean mason jars or a fermenting crock if you have it
Optional: caraway seeds, garlic, or shredded carrots for extra flavor
Instructions:
1. Remove outer cabbage leaves and set aside. Chop or shred the rest.
2. Weigh cabbage and salt. You want 2% salt, so for example, if you have 1000g of cabbage, use 20g of salt.
3. Place cabbage in a bowl, sprinkle with salt, and massage for 5-10 minutes until it releases liquid. Let sit for 30 to 45 minutes, until all liquid has released.
4. Pack it tightly into a clean jar, pressing down so liquid covers the cabbage. Use a reserved cabbage leaf to keep everything submerged.
5. Cover with a fermentation lid for best results. But you can also use a loose lid or cloth and let it ferment at room temp in the dark for 1-2 weeks. Taste as you go!
6. Once it’s tangy to your liking, seal it and store it in the fridge. Enjoy on everything!

Currently, 26 U.S. jurisdictions license or register NDs. In these jurisdictions, NDs are required to graduate from an accredited four-year Naturopathic medical program and pass an extensive postdoctoral licensing examination before practicing.

As a system, Naturopathic Medicine focuses on identifying the underlying “root” causes of disease and then addressing those causes with evidence-based natural therapies. Licensure would ensure Floridians can access these rigorously-trained medical professionals.
