🌿 Hearty Lentil & Vegetable Soup (Comfort for Body + Soul)
This is one of those grounding, nourishing meals that feels like a deep exhale. It’s warm, simple, and full of steady energy—perfect for chilly evenings, emotional days, or anytime you want to feel cared for from the inside out.

Ingredients
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 cup dry lentils (green or brown), rinsed
1 can diced tomatoes (or 2 fresh tomatoes, chopped)
4–5 cups vegetable broth
1 tsp cumin
½ tsp smoked paprika
½ tsp dried thyme
Salt & pepper to taste
Optional: a handful of spinach or kale, splash of lemon juice
Instructions
Heat olive oil in a pot over medium heat.
Sauté onion, carrots, and celery for 5–7 minutes until soft.
Add garlic and spices; stir until fragrant.
Add lentils, tomatoes, and broth. Bring to a gentle boil.
Reduce heat and simmer 25–30 minutes, until lentils are tender.
Stir in greens (if using) and a squeeze of lemon. Adjust seasoning.
