A refined and gourmet dessert with a crunchy chocolate shell, a tasty praline heart and a light and creamy mascarpone mousse. A real delight for chocolate lovers!
📋 Ingredients:
For the Chocolate Domes:
200 g of dark chocolate 🍫
For the Praline:
100 grams of hazelnuts 100
100g of powdered sugar 🍬
For the Mascarpone Mousse:
250 g of mascarpone 🥛
100ml whole liquid cream 🥛
50 g of icing sugar 🍬
1 teaspoon of vanilla extract 🍨
: Instructions:
Preparing Chocolate Domes:
Melting chocolate:
Finish the dark chocolate. Melt 2/3 of the ban-mary chocolate until it reaches about 45°C (113°F). Remove from the heat and add the remaining 1/3 of the chopped chocolate, stirring until the chocolate is smooth and reaches about 31°C (88°F).
Molding the domes:
Using a brush, brush the inside of silicone molds in the shape of a semi-sphere with melted chocolate. Allow to harden at room temperature, then apply a second layer of chocolate to strengthen the shells. Put in refrigerator to harden completely.
Preparation of the Praline:
Caramelizing hazelnuts:
Bake the hazelnuts in the oven at 180°C (350°F) for about 10 minutes, then rub them in a torch to remove the skin. In a saucepan, melt the sugar over medium heat until you get a golden caramel. Add the roasted hazelnuts in the caramel and mix to coat them well. Pour the caramelized hazelnuts on a sheet of sulfurized paper and let cool completely.
Praline mix:
Break the caramelized hazelnuts into pieces and mix them in a robot until you get a smooth praline batter.
Preparation of Mascarpone Mousse:
Basic mix :
In a bowl, mix mascarpone with icing sugar and vanilla extract until you achieve a smooth consistency.
Preparing the whipped cream:
Whip all over the liquid cream until you get firm peaks.
Gently incorporate the whipped cream into the mascarpone mixture using a spatula, making sure not to drop the mousse.
Assembly of the Domes:
Filling up the shells:
Fill hardened chocolate shells with a layer of praline.
Adding the mousse:
Add the mascarpone mousse on top of the praline until the chocolate shells are filled.
Closing the domes:
If necessary, coat the domes with a fine layer of melted chocolate to seal them.
Refrigeration:
Leave the domes in the fridge for at least 2 hours for the mousse to soak well.

Instructions:
Prepare the Ganache:
