Good news today. Last year's potato crop is beginning to sprout so Spring is just around the corner! Here's my recipe for potato soup
1. Fry or bake at least a pound of good bacon 🥓 let cool and crumble.
2. Peel and dice 🥔
3. Chop onion, celery and carrots
4. In large soup pot melt 1/2 stick of real butter over low heat and sweat out the onion for a few minutes. Add large box of chicken broth, potato, celery and carrots. Add enough water to cover vegetables plus over one inch
5. Bring up heat to simmer and put on the lid
6. While veggies cook, chop up some green onions, shred cheddar cheese.
7. When soup is ready to serve, I add some potato starch to thicken and use a stick blender to quickly mash about a third of the soup. Taste a bite and add salt and black or white pepper to taste
8. Ladle soup into bowls. Top with a spoonful of sour cream or creme fraiche (from Kroger), cheddar cheese, parsley, green onions and bacon.
