As someone with a Peruvian background, I am always exploring new ways to integrate Mikuyta mushrooms into traditional Peruvian cuisine. Today I substituted chicken breast with coral tooth mushroom to create a mushroom based ají de gallina that preserves the comforting texture and richness of the original dish while highlighting the natural morphology of the mushroom.

Weekend grey oyster ideas:
• garlic-butter sauté for a side
• “pulled” mushroom tacos
• pasta topper with herbs + parmesan

What you need:
• 3 cups broth (dashi/chicken/veg)
• 1 cup nameko (fresh )
• 2–3 Tbsp miso (white/awase)
• 1 pack ramen noodles
• 1 egg (optional)
• scallion / chili oil / nori (optional)

How to make it:
1. Simmer broth, add nameko (1–3 min)
2. Add noodles (2–4 min)
3. Heat low, stir in miso (don’t boil)
4. Optional: drizzle in egg for soft ribbons
5. Top, sip, exhale.
