🌻 **Fresh Sunflower Shoot Salad** 🥗✨
Eat the sun! This vibrant, nutrient-packed salad is bursting with flavor, texture, and sunshine energy. Perfect for a light lunch or a side that *glows* 🌞

**Recipe:**
2 cups sunflower shoots 🌿
1 small cucumber, sliced 🥒
1 avocado, diced 🥑
½ cup cherry tomatoes 🍅
Toasted sunflower seeds for crunch 🌻

**Dressing:**
2 tbsp olive oil
1 tbsp lemon juice 🍋
1 clove garlic, minced 🧄
½ tsp Dijon mustard
Salt & pepper to taste 🧂

👉 Toss it all together and drizzle with the lemon-garlic goodness.

✨ Optional: Add feta or a soft-boiled egg for extra richness.
