This fresh pea shoot & spiced chicken salad is a favourite! Crisp, vibrant, and topped with our locally grown microgreens. Recipe below—let me know if you’d try it!
Fresh Pea Shoot & Spiced Chicken Salad
Ingredients:
* Mixed baby leaves
* Baby gem leaves, ripped
* Fresh mint leaves
* Pomegranate seeds
* Cucumber, cored and sliced
* Cherry tomatoes, halved
* Red cabbage, lightly salted with sea salt
* Spring onions, sliced
* Outstanding Microgreens pea shoots (some mixed in, some for topping)
* 1 spiced chicken breast, cooked and sliced
* 100 g Greek yogurt
* Squeeze of lemon juice
* Salt and pepper to taste
* Fresh parsley and thyme, finely chopped
Steps:
1. In a large bowl, combine the mixed baby leaves, ripped baby gem leaves, mint, pomegranate seeds, cucumber, cherry tomatoes, red cabbage, spring onions, and a portion of the pea shoots. Toss gently.
2. In a small bowl, mix the Greek yogurt, lemon juice, salt, pepper, parsley, and thyme to create the dressing.
3. Add the spiced chicken slices to the salad.
4. Drizzle the yogurt dressing over the salad and toss lightly.
5. Top with the remaining pea shoots for a fresh finish.
