This week, I received spent grains leftover from beer production, courtesy of Cliff at Rudders. As a byproduct of brewing, spent grain boasts numerous benefits, including being rich in fiber, protein, and phenolic compounds, which enhance digestion, augment nutritional value, and are low in gluten, making them a healthy and nutritious treat for pets. Additionally, it was really fun to make them. Who says dogs can't enjoy the benefits of beer.

Lately, the weather has not been cooperative, providing an opportunity to experiment with new recipes. This is an oatmeal carob peanut butter sandwich cookie. It contains no added sugars, is gluten-free, and made with coconut flour, oat flour, coconut oil, carob, and all-natural peanut butter.
