I arrived in Australia at the tender age of three, an Italian migrant kid with big dreams and an even bigger appetite for pasta. Growing up, school was non-negotiable — no excuses, no sick days, no “I forgot my homework” — except for one sacred exception: the day we made the sauce. That’s right, the most important day in the Italian calendar wasn’t Christmas, Easter, or even my birthday. It was sauce day. On that hallowed day, homework was banned, teachers were bribed with garlic and oregano, and we gathered in the back yard to create culinary masterpieces that could feed a small army.
Those early years taught me the value of hard work, family, and respecting the tomato like it was a national treasure. They also taught me that sometimes, the most important lessons aren’t in textbooks — they’re in stirring, tasting, and perfecting a sauce that could make even Nonna proud.
