Chip-mas Crack: Salty-Sweet Christmas Crack with Potato Chips

Cook 10 mins
Serves 10

165g pkt Australian Sea Salt Deli Style Potato Chips
255g (1 1/4 cup, firmly packed) brown sugar
200g unsalted butter, chopped
350g Dark Ghana 72% dark chocolate, melted
Red Gum Smoked Salt, to sprinkle

Preheat oven to 180C/160C fan forced. Line a 20 x 30cm slice pan with baking paper, allowing the paper to overhang the 2 long sides. Arrange potato chips over the base of the prepared pan. Use a flat bottomed glass to crush potato chips slightly to create an even layer.

Place sugar and butter in a small saucepan over medium heat. Cook, stirring, until butter melts and mixture is smooth. Bring to the boil. Cook, stirring, for 30 seconds or until thickened.

Pour sugar mixture evenly over the potato chip layer and smooth the surface. Bake for 5 minutes or until sugar mixture is bubbling. Set aside to cool slightly.

Pour the dark chocolate over the sugar mixture. Use a palette knife to smooth the surface. Sprinkle with salt flakes. Place in the fridge for 2 hours or until set. Cut the crack into pieces or break into shards, to serve.

Happy . Here’s a lemon meringue crepe cake to celebrate 🍋😜 Recipe below or at taste.com.au (link in bio) x

250ml (1 cup) fresh lemon juice
8 eggs
270g (1 ¼ cup) caster sugar
35g (¼ cup) cornflour
600ml ctn thickened cream
300g (2 cups) plain flour
750ml (3 cups) milk
Edible gold leaf, to decorate (optional)
Meringue
4 egg whites
270g (1 ¼ cup) caster sugar

1 Place the lemon juice in a saucepan over medium heat. Cook, stirring, until it just comes to the boil. Remove from heat.

2 Use a balloon whisk to whisk 4 eggs and 215g (1 cup) sugar in a bowl until well combined. Add cornflour and whisk until combined. Slowly pour in the hot lemon juice, whisking constantly until smooth. Pour mixture into pan. Cook over medium-low heat, whisking constantly, until the mixture thickens and comes to the boil. Remove from heat. Whisk in 160ml (⅔ cup) cream until combined. Use a sieve to strain the mixture into a clean bowl. Cover surface directly with plastic wrap. Place in the fridge for 3 hours or overnight to chill.

3 Meanwhile, place the flour, milk, remaining eggs and sugar in a blender. Blend until smooth. Transfer the mixture to a bowl. Cover and place in the fridge for 30 minutes or overnight to rest.

4 Heat an 18cm (base size) non-stick frying pan over medium-low heat. Lightly grease pan with oil spray. Add slightly less than a ¼ cupful of crepe mixture to pan. Tilt the pan in a circular, swirling motion to cover base. Cook for 1-2 minutes or until the edge starts to curl. Turn over and cook for a further 30 seconds or until golden. Transfer to a plate. Repeat with remaining crepe mixture to make 24 crepes in total. Set aside to cool completely.

5 Gently stir lemon curd to soften slightly. Use electric beaters to beat remaining cream in a bowl until firm peaks form. Place 1 crepe on a serving plate. Spread with 2 tbsp whipped cream, leaving a 1 cm border. Top with another crepe. Spread with 2 tablespoonfuls of curd, leaving a 1cm border. Continue layering with remaining crepes, whipped cream and curd, finishing with a crepe. Place in the fridge for 1 hour to chill.

BEST. BIRTHDAY. EVER. Still speechless. The biggest thank you to my incredible cake pals for pulling off this sweet surprise, my family and friends for the constant sushi train of generous gifts, flowers and even more cake that kept rolling in and for all the calls, FaceTimes, messages and texts throughout the day.
